Recipe of the Month:
Tequila Shrimp Ceviche on Cucumber Plates

  • Marinade all ingredients except the Cucumber slices, and only use 1/2 of the cilantro in the marinade.

    Place marinade in fridge for 3-4 hours.

    Remove and serve on cucumber slices, garnish with remaining cilantro.

    Recommended beverage: Corona well chilled, or any Mexican beer.

Ingredients:

  • 2 lbs medium raw shrimp, cleaned and chopped into a medium dice
    3 large tomatoes, diced
    6 limes, juiced
    4 lemons, juiced
    1 cup cilantro leaves, chopped
    1 serrano chile, seeded and finely chopped
    2 Cucumbers sliced into 1/2 to 1inch thick slices
    1 red onion, diced (optional)
    1/4 cup Tequila
    lots of salt and pepper
