Tortilla Soup with Corriander Lime Chicken
In a medium stock pot, heat oil over medium heat. Saute onion and garlic in oil until soft. - Stir in chili powder, oregano, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
- Stir in corn, hominy or kidney beans, chiles, black beans, 1/2 of the cilantro, and chicken. Simmer for 10 minutes.
- Ladle soup into individual serving bowls, and top with crushed tortilla chips, shredded cheese, and chopped green onion, garnish with remaining cilantro.
- Recommended beverage: Gold or Silver Tequila.

Ingredients:

1 medium onion diced
4-5 cloves of minced garlic
3 tablespoons of olive oil
2 tablespoons each of chili powder, and oregano
1 28ounce can of crushed tomatoes
1 cup of chicken broth + 1 cup of water
1 cup fresh corn kernels
1 cup of hominy (if not available, use kidney bean as it also works well)
1/2 jalepeno pepper, de-seeded
1 can of black beans that have been rinsed
1/2 cup of chopped cilantro
2 chicken breasts rubbed with corriander powder and juice of 1 lime then cooked and diced
crushed tortilla chips
